Cheesy + Spicy Bean Dip

I shared this dip I made on instastories on Friday and I got a few questions on how I made it. Growing up, my mom would always make this as an appetizer when my parents had parties or for me and my friends after school. There’s massive nostalgia there and it also is just striaght up cozy comfort food. It was raining on Friday and I was missing my mom, so I decided to whip it up. It could not be easier and is comprised of items you already likely have in your fridge and pantry. Plus, it’s customizable, so you can add or omit toppings as you like. For example, some fresh black olives and chopped tomato on top after bake is a super yummy addition! So, here is the recipe in case any of you are looking to mix up your snacks this week or make use of some of your canned goods.

See? Easy peasy! This recipe serves 4 [in pretty hearty servings] and the macros are pretty good! Especially for cozy comfort food, you get good carbs and protein from the beans and fat from the dairy. While it is definitely heavy on the sodium [mostly from the canned jalapenos], I’m okay with it. Live a little!
